Healthy Rice Crispy Treats

Eating healthy doesn’t mean you have to give up the things you love. With the right substitutions you can make your favorite treats and eat them without feeling guilty. This healthy version of rice crispy treats is one that everyone in your family will love!


This recipe is adapted from The Kind Diet. Here’s what you’ll need:


Healthy Rice Crispy Treats

vegetarian, vegan, gluten-free, soy-free, dairy-free, tree nut-free, seed-free, shellfish-oil, fish-free, nightshade-free, bean & legume-free


  • 1 box brown rice crisps cereal (I used a bag of Arrowhead Mills Puffed Rice cereal)
  • 1 cup brown rice syrup
  • 1/2 cup maple syrup
  • Pinch of sea salt
  • 3/4 cup peanut butter (crunchy or creamy works)
  • 1/2 cup carob chips (chocolate chips or raisins work too)

Pour cereal into a large bowl. Heat brown rice syrup, maple syrup, and salt in a saucepan over low heat.

When mixture liquefies add peanut butter and stir until combined.

Pour mixture over cereal and mix with a wooden spoon.

When cereal mixture is cooled to room temperature, add chocolate chips.

Scoop mixture into a 9 x 13 baking dish and use a piece of wax paper to press it firmly into the pan. Refrigerate for 1 hour.

Cut into 12 squares and serve. I wrapped my squares up individually in plastic wrap so that they will be easy to grab in a hurry!
