Pumpkin Pie Granola

I wanted to make some homemade granola to enjoy for breakfast this week and in lo and behold, in the spirit of fall, I have created Pumpkin Pie Granola! I pulled out everything from my cupboards that reminded me of fall and got to work.


Pumpkin Pie Granola 

vegetarian, vegan, gluten-free, soy-free, dairy-free, peanut-free, shellfish-oil, fish-free, nightshade-free, bean & legume-free


  • 3 1/2 cup oats
  • 1/2 cup chopped pecans
  • 1/2 cup chopped walnuts
  • 1/2 cup pumpkin seeds
  • 1/2 cup shredded coconut
  • 1/2 (15oz) can plain pureed pumpkin
  • 1/4 cup maple syrup
  • 1/4 cup applesauce
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 1 Tbsp pumpkin pie spice
  • a pinch of salt
  • 1/2 cup raisins
  • 1/2 cup cranberries

Preheat oven to 300*F. In large bowl combine oats, nuts, and coconut. In a small bowl, combine pumpkin, maple syrup, applesauce, vanilla, sugar, pumpkin pie spice, and salt. Whisk to combine. Add the wet mixture to the dry ingredients and stir to coat. Spray a large (or 2 small) baking sheet with cooking spray and spread granola mixture evenly onto pans. Cook granola for 30 minutes stirring every now and then to allow all ingredients to cook evenly. Remove from oven and add dried fruit. Let cool to room temperature before storing.


If you’re like me, you will eat handfuls of this stuff while it’s cooling before you even get a chance to store it!
