1. Where do you get all of your recipes?
I get my recipes from How to Cook Everything Vegetarian by Mark Bittman, The New Moosewood Cookbook by Mollie Katzen, and The Best of Cooking Light by Hollie Contri Johnson. I get a lot of my recipes from health magazines including Vegetarian Times, Diabetic Living, and Taste of Home: Healthy Cooking. You can actually get a lot of really good recipes from vegetariantimes.com, cooklight.com, tasteofhome.com, and diabeticlivingonline.com. I am always on the lookout for new and fun recipes, so feel free to send any good ones my way!
2. How much saturated fat should I eat each day?
Your saturated fat intake should not exceed 7% of your daily calories. For example, if you consume 2,000 calories a day, no more than 140 of those calories should be from saturated fat. One gram of fat is 9 calories. Therefore 140 calories of fat is equivalent to 15 grams of saturated fat (140/9 = 15).
3. Are you a registered dietitian?
Yes, I am a licensed Registered Dietitian with a background in Biology and Nutrition Science.
4. What kind of camera do you use?
I use a Kodak EasyShare LS743. I bought this camera back in 2004 and cannot wait to replace it! But for now, it does the job.
5. Are you a vegetarian?
I try to eat as many vegetarian meals as I can, however I do incorporate lean meats such as chicken and turkey into my dishes. When I do include meat, I choose it carefully to ensure the animals were grass-fed, free-range, and not given any antibiotics or growth hormones.
6. What do you do for workouts?
I like to maintain variety in my workout schedule so I include strength training, running, cycling, and group fitness classes as part of my weekly routine.
7. Do you participate in any races?
I have run a number of 5K races and 2 Rock ÔÇÿn’ Roll Half Marathons. I hope to complete a triathlon or even a full marathon some day!
8. Do you use a heart rate monitor when you work out?
I have a Polar RS 400 Heart Rate Monitor and I absolutely love it! It motivates me to push myself when I work out and keep track of the calories I burn.
