Tomato Basil Mozzarella Salad

Another heart-healthy summer recipe comin’ atcha! This tomato basil mozzarella salad is the perfect simple side to any summer meal. If you asked me if I make this salad 100 times every summer, I’d say yes…well just about anyways.


It’s the kind of salad you can toss together in a pinch while still impressing guests at a picnic. And the best part is, you don’t really have to measure anything. Win win.

Tomato Basil Mozzarella Salad with Balsamic Vinegar

This tomato basil mozzarella salad is what summer taste like to me. You’ve got juicy farmer’s market cherry tomatoes and fresh garden basil tossed lightly with olive oil and balsamic vinegar. And don’t forget the little chewy low-fat mozzarella balls – those THE BEST PART. Top with pine nuts if you have them on hand – not a necessity here, but definitely a healthy crunchy bonus.

Let me tell you a little secret…

The key to keeping this salad looking pretty is to toss the tomatoes with the oil and vinegar and THEN sprinkle with the fresh basil and mozzarella cheese. Otherwise you’ll have wilted basil and brown balsamic mozzarella cheese – amateur move.

To make this tomato basil mozzarella salad look even more gourmet, use both red and yellow cherry tomatoes.
