Healthy Fall Pumpkin Recipes

It’s that time of year again, pumpkin season! [Insert cheers and the clinking of coffee mugs brewing pumpkin spice lattes] If you’re like me, you’ve already stocked up on cans upon cans of pumpkin puree in preparation for the season. Each year I have flashbacks to the tragic year when the pumpkin puree shelves at my local supermarket ran bare mid-season. Now every time I’m grocery shopping, I toss an extra can or two into my cart just for good measure (you can never be too sure). With my shelves fully stocked, fall baking season has begun and it’s time to put pumpkin in everything!

Pumpkin Spice Recipes

  • Pumpkin Pie Peanut Butter Cups by Chocolate Covered Kate: These no-bake, Halloween-themed candy cups combine the festive flavors of chocolate, peanut butter and pumpkin all in one bite!
  • Vegan Pumpkin Spice Ice Cream by Tasty Yummies: This dairy-free treat is made with a blend of coconut and almond milk mixed with seasonal cinnamon, clove and nutmeg spices.
  • Pumpkin Bread Pudding by Love & Lemons: Sweet potato bread is drenched with a maple-pumpkin batter in this guilt-free treat which is made without all of the butter used in traditional bread pudding recipes.
  • Vegan Pumpkin Cinnamon Rolls by Minimalist Baker: These simple 10 ingredient cinnamon rolls are warm, gooey, perfectly flavored with pumpkin and drizzled with a sticky dairy-free glaze. I recently made these using gluten-free, all-purpose flour and while the rolling process gets a bit tricky due to the lack of stickiness in the dough, the end product was just as delicious!

What I love about this recipe is the unique use of gluten-free, vegan ingredients including brown rice flour, potato starch, sorghum flour and homemade coconut milk “buttermilk”.
  • No-Bake Pumpkin Cheesecake Bites by EatGood4Life via Nuts.com: Layered with an almond flour and date crust and a creamy cashew pumpkin topping, these healthy bites make the perfect seasonal snack!
  • Pumpkin Spice Granola Bars by Fork Knifes Swoon: I love me some pumpkin granola in the fall, but these bars take things to whole new level. These nutrient-dense bars are made with oats, coconut flakes and pumpkin seeds and topped with a sweet while chocolate drizzle.
  • Pumpkin and Gingerbread Ice Cream Sandwiches by Cannelle et Vanille: Creamy pumpkin spice ice cream is sandwiched between two chewy gingerbread sugar cookies in this seasonal frozen dessert. Treat yourself to this decadent recipe as is or make a few healthy substitutions as needed.
