Classic French Onion Soup

The weather in Chicago today has been completely unpredictable. With the Bears game delayed, the rain coming down, and a tornado warning in effect, I decided to keep cozy with some soup!

Classic French Onion Soup is one of my favorite winter comfort foods. Yes, even dietitians enjoy comfort food once in a while in…in moderation of course. In my defense, it has been over 2 years since I last made this soup!

While most recipes for French onion soup start out with loads of butter to help brown the onions, I prefer to simply caramelize my onions with broth and constant stirring to keep this heavy duty soup a little bit healthier.

Holy YUM – this ooey gooey creation was by far the best version of this soup I’ve ever made. Patience is everything when it comes to caramelizing onions to bring out their best flavors and you certainly don’t want to rush the process when cooking this soup!

This was the perfect lunch to enjoy on a lazy Sunday while watching the storm pass by…despite the fact that I had to eat half of it in the bathroom under cover from a potential tornado…

The clouds have since parted and the sun is now shining – time to brave the weather and run some errands. Hope everyone in the Chicagoland area is staying safe today.
