In keeping with the theme of Paleo today, I made a delicious Shrimp Avocado Salad for lunch!
The salad consisted of a simple bed of lettuce, sliced avocado, cherry tomatoes, and lemon garlic shrimp.
I recreated this salad based on this one I had in Mykonos!
Instead of a creamy dressing for the salad, I used Isola Cream of Balsamic, one of my newest favorites in the kitchen! Cream of balsamic is a balsamic reduction, concentrated grape juice, and a touch of cornstarch to give it a creamy texture. It’s so easy to drizzle over just about anything and comes in a variety of flavors from Truffle and Walnut Pear to Wild Berry and Blood Orange – yum! If you haven’t tried this stuff already, you must pick some up during your next trip to Whole Foods!
