Cherry Oatmeal Breakfast Cookies
soy-free, dairy-free, peanut-free, shellfish-oil, fish-free, nightshade-free, bean & legume-free
- 1 cup rolled oats
- 2 Tbsp wheat germ
- 1 Tbsp millet
- 1 Tbsp chia seeds (don’t know about these powerhouse seeds, click here!)
- 1/2 cup dried cherries (raisins work too)
- 1/4 cup protein powder
- 1/4 cup unsalted cashew pieces
- 1/4 cup honey (check out the health benefits of honey here!)
- 1/4 cup cashew butter (any nut butter will do)
- 1 tsp vanilla extract
- 1 egg white
- Cooking spray
Preheat oven to 325*F and spray a large baking sheet with cooking spray. In a large bowl combine oats, wheat germ, millet, chia seeds, cherries protein powder and cashews. In a separate small bowl whisk together honey, cashew butter, vanilla and egg white. Combing the wet ingredients with the dry ingredients and mix well. Scoop out and form golf-ball sized domes (recipe makes about 15) and place on baking sheet. Bake for 15-18 minutes until golden brown – keep a close eye on them so the bottoms don’t burn! Cool and enjoy!
