Easy Breakfast Frittata

Making a frittata is not only one of the simplest breakfast meals you can make, but also a great way to start your morning off with some fresh veggies! Any leftover vegetables you can find in your fridge will do.

Easy Breakfast Frittata

gluten-free, grain-free, soy-free, peanut-free, tree nut-free, seed-free, sugar-free, shellfish-oil, fish-free, bean & legume-free

Ingredients:

  • 1 Tbsp olive oil
  • 1/2 onion, chopped
  • 1/2 bell pepper (I used red and orange), chopped
  • 1 cup spinach, chopped
  • 1 whole egg + 3 egg whites
  • 1/4 cup skim milk
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • Pinch of cumin

Preheat oven to 350*F. In a large skillet, cook vegetables in olive oil until soft.

In a separate bowl, whisk together egg, egg whites, milk, salt, pepper, and cumin. Pour egg mixture over vegetables in skillet and allow egg to cook until edges are set. Place skillet in oven for 5-7 minutes more until entire frittata is cooked through.

Top with salsa or hot sauce and enjoy!

Frittatas don’t have to be served just for breakfast either. They make for a quick, easy, and nutrient-packed meal for lunch and dinner as well!
