With summer right around the corner, this cucumber salad makes the perfect lunch or side dish! This recipe was actually being handed out at Trader Joe’s yesterday as a free sample. It was too good and simple to pass up!
vegetarian, vegan, gluten-free, grain-free, soy-free, dairy-free, peanut-free, tree nut-free, sugar-free, shellfish-oil, fish-free, bean & legume-free
- 6 Persian cucumbers (small seedless cucumbers)
- 1 cup cherry tomato halves
- 1/2 red onion, chopped
- 3 Tbsp olive oil
- 1-2 Tbsp balsamic vinegar
- salt, pepper, and spices to taste (I used a Mrs. Dash mix)
In a large bowl combine all ingredients and refrigerate until ready to enjoy! Can’t wait for more warm weather this week!
