Unique Guacamole Recipes

Lately I have been on a guacamole kick. Avocados have been on sale at my grocery store and I just can’t get enough! While I totally adore a foolproof traditional guacamole, I have been experimenting with some more unique recipes that put a fun twist on guacamole.

A couple of weeks ago I made this delicious Toasted Pumpkin Seed Guacamole twice in a row!

Toasted Pumpkin Seed Guacamole (adapted from Fiesta at Rick’s by Rick Bayless)

vegetarian, vegan, gluten-free, grain-free, soy-free, dairy-free, peanut-free, tree nut-free, sugar-free, shellfish-oil, fish-free, bean & legume-free

Ingredients:

  • 3 medium ripe avocados
  • 1/2 small red onion, chopped
  • 1 fresh serrano chili, stemmed, seeded and finely chopped
  • 2 Tbsp fresh cilantro, chopped
  • 2 Tbsp fresh lime juice
  • 3/4 cup hulled, toasted, salted pumpkin seeds
  • 1 Tbsp olive oil
  • salt to taste

In a large bowl mash avocado with a fork. In a small strainer, rinse chopped onion under cold water and shake off excess water. Add onion, serrano chili, cilantro, and lime juice to the avocado and mash together. Place pumpkin seeds in a food processor and pulse until finely ground. Add olive oil and pulse until a chunky paste forms. Add paste into avocado mixture and combine. Add salt to taste. Cover and refrigerate for a couple of hours to allow the flavors to mix before serving.

And last night, Will made Thai Guacamole to go along with dinner. The ginger and curry give this guacamole an incredible Asian flair that is unlike any guacamole I’ve ever had!

Thai Guacamole (adapted from Emily at A Nutritionist Eats)

vegetarian, vegan, gluten-free, grain-free, soy-free, dairy-free, peanut-free, tree nut-free, sugar-free, shellfish-oil, fish-free, bean & legume-free

Ingredients:

  • 4 medium ripe avocados
  • juice from 1 lime
  • 1 jalapeno pepper, stemmed, seeded, and finely chopped
  • 1 tsp ginger, minced
  • 2 cloves garlic, minced
  • spices to taste: coriander, curry powder, salt
  • 1 cup cilantro, chopped

Combine all ingredients together in a large bowl and mash together. Cover and refrigerate for a couple of hours before serving to allow the flavors to mix.

    I did a guac bar once with toppings like bacon, queso fresca, tomatoes, etc. – so fun and went over really well!
