Candied Citrus Peel

Winter is the season for citrus. In efforts to ward off the common cold, we all turn to citrus fruits loaded with vitamin C. But don’t be so quick to throw away the peel after you are done eating an orange or squeezing a lemon or lime into your favorite recipe. Use the peel in this fun candy recipe to make a sweet winter treat! This guilt-free candy won’t spoil your New Year’s resolutions either!

Candied Citrus Peel

vegetarian, vegan, gluten-free, grain-free, soy-free, dairy-free, peanut-free, tree nut-free, seed-free, shellfish-oil, fish-free, nightshade-free, bean & legume-free

Ingredients:

  • Peels from 4-5 citrus fruits* (I used 2 limes, a lemon, a tangerine, and an orange)
  • 1 1/2 cups cane sugar
  • 1 cup water

Peel the fruits, keeping as much of it intact as possible. If you are able to peel the entire fruit without it ripping, cut the peel into quarters before cooking. However if you’re like me, you’ll end up with a bunch of little pieces after you’re done peeling anyways. In a medium saucepan, cover peels with water and simmer with a lid for 1 hour. Drain and rinse the peels under cold water until cool. Using a spoon, scrape away any remaining pith in the peels. Cut peel into small pieces or strips.

In saucepan, heat 1 cup of water with 3/4 cup sugar. Stir and bring to a simmer until all sugar has dissolved. Add citrus peels and simmer uncovered for 1 hour (until almost all syrup is absorbed). Transfer peels to a colander and drain. On a large plate, place remaining 1/2 cup of sugar. Roll each peel into the sugar until well coated and transfer onto parchment paper to dry for at least 6 hours (overnight works too).

Store in an airtight container and enjoy throughout the winter!

*Note: fruits with a thicker peels such as oranges, lemons, and limes work best. The peel of the tangerine was tricky to work with because it tore easily.
