After obsessing over the Broccoli Crunch Salad at Whole Foods this week that I had to find out how to make it myself!
Do you ever do that? Eat something so delicious that you can’t wait to get home and figure out how to make it? I do ALL the time
Here’s what I came up with, and it’s pretty darn close if you ask me!
Ingredients:
- 2 heads of broccoli, cut into bite size florets and rinsed
- 1/4 cup raisins
- 1/4 cup sunflower seeds
- 1/4 red onion, chopped
- 5 slices bacon (I used turkey bacon)
- 1 cup mayonnaise
- 3 Tbsp sugar
- 3 Tbsp apple cider vinegar
- Pepper to taste
Cook bacon in a skillet over medium-high heat until brown. Crumble or cut into small thin strips. Place broccoli in a humongous bowl and set aside. In a medium-sized bowl combine raisins, onion, sunflower seeds, and bacon. In a small bowl whisk together mayonnaise, sugar, vinegar, and black pepper. Add raisin mixture and dressing to broccoli until proportions are to your liking.
This salad is SO yummy and makes for a perfect lunch or side dish for any occasion.
