Friday night we stayed in for a relaxing evening, made dinner, and in the spirit of Halloween watched Zombieland! We had maple glazed pork chops, roasted autumn veggies, and cranberry-apple sauce. The pork chops are yet another charming recipe from my new I Love Trader Joe’s Cookbook.
Maple Glazed Pork Chops
gluten-free, grain-free, soy-free, dairy-free, peanut-free, tree nut-free, sugar-free, shellfish-oil, fish-free, nightshade-free, bean & legume-free
- 1 Tbsp grapeseed oil
- 3 boneless pork loin chops
- 6 Tbsp maple syrup
- 2 Tbsp balsamic vinegar
- 1 Tbsp Dijon mustard
Preheat oven to 375*F. In medium pan, heat oil over medium-high heat and brown pork chops for 4 minutes on each side. Combine maple syrup, balsamic vinegar, and mustard in a small bowl. Place pork chops in a baking dish and pour sauce over them. Bake for 15 minutes until pork is done.
This recipe was super easy and delicious, however I think I prefer the Black Pepper Chicken Squash from the other night. Maybe it’s because I prefer chicken over pork, but the flavors in that recipe are tough to beat!
Roasted Autumn Veggies
vegetarian, vegan, gluten-free, grain-free, soy-free, dairy-free, peanut-free, tree nut-free, seed-free, sugar-free, shellfish-oil, fish-free, nightshade-free, bean & legume-free
- 2-3 Tbsp olive oil
- 1/2 sweet potato, peeled and cubed
- 1/2 parsnip, peeled and cubed
- 1/2 small butternut squash, peeled and cubed
- 1 Tbsp spices of your choice
Peel and cube veggies. In a large skillet heat oil and add veggies. Cook for about 5 minutes until they just begin to get a bit tender. Transfer to baking sheet and sprinkle generously with spices (I used a salt-free spice mixture similar to Mrs. Dash). Bake at 375*F for about 30 minutes until veggies are soft. These are the best side dish to any fall meal; I could seriously eat these every night – they are that good!
Cranberry Apple Sauce
vegetarian, vegan, gluten-free, grain-free, soy-free, dairy-free, peanut-free, tree nut-free, seed-free, shellfish-oil, fish-free, nightshade-free, bean & legume-free
- 2 cups fresh cranberries
- 1 cup raisins
- 1/2 cup sugar
- 1/2 cup maple syrup
- 1 Tbsp ground cinnamon
- 1 tsp ground ginger
- 1/4 tsp ground cloves
- 3 medium apples, cored and chopped
- 1 cup water
Combine cranberries, raisins, sugar, maple syrup, cinnamon, ginger, cloves and water in a large sauce pan. Place over medium heat and cook for 15 minutes. Stir in apples and cook for another 15 minutes. Remove from heat and serve warm.
These are one of my favorite treats this time of year and this recipe is foolproof!
