Pumpkin Bars

Last night, Will made a request for a particular pumpkin bar recipe. Years ago I baked these pumpkin bars and remembered that the recipe, while totally delicious, was not too healthy. I wasn’t too thrilled about making these until I heard that they were going to be taken into the office for a Halloween party. Then I agreed to help out. Initially I wanted to make healthy substitutions to the recipe, but when I was told they they were going to be part of a dessert competition, I decided that this was not the time to experiment.

Pumpkin Bars

soy-free, peanut-free, tree nut-free, shellfish-oil, fish-free, nightshade-free, bean & legume-free

Ingredients:

  • 1 package yellow cake mix
  • 1/2 cup butter, melted + 1/4 cup unmelted butter
  • 3 eggs
  • 2 cans pumpkin puree
  • 1/2 can of condensed milk
  • 1/3 cup white sugar
  • 1/4 cup brown sugar
  • 2 Tbsp pumpkin pie spice
  • 2 tsp cinnamon

Preheat oven to 350*F. Grease the bottom of a 9×13 inch pan. Pour one cup yellow cake mix into medium sized mixing bowl and set aside. Combine the remaining cake mix, 1/2 cup melted butter and 1 egg; mix well. Pour into bottom of baking pan. Combine pumpkin, 2 eggs, 1/3 cup white sugar and condensed milk in a medium size mixing bowl. Mix in pumpkin pie spice and mix until smooth. Spread mixture in pan over the cake crust batter. Add 1/4 cup brown sugar and 2 tsp cinnamon into the mixing bowl containing the remaining 1 cup cake mix. Cut 1/4 cup butter into the mixture until crumbly. Sprinkle mixture on top of pan. Bake for 30-40 minutes until knife inserted comes out clean. Let cool to room temperature and refrigerate overnight.

I’m not going to lie, these pumpkin bars taste incredible! With a stick and a half of butter and a box of cake mix how could they not? ­čÖé I recommend taking them to a party or sharing them with friends and family so you won’t be tempted to eat the whole pan yourself!

  1. Oooh, I remember hearing about these before… I guess my Wednesday evening is now planned out (and Thursday when I have to run a million miles to make-up the calories).
