In preparation for my road trip to Minnesota tomorrow, I made some salsa to take with me on the road! All of the ingredients came from my trip to the farmer’s market over the weekend. I couldn’t wait to use my heirloom tomatoes to make something, and salsa was the perfect solution!
Heirloom Tomato Salsa
vegetarian, vegan, gluten-free, grain-free, soy-free, dairy-free, peanut-free, tree nut-free, seed-free, sugar-free, shellfish-oil, fish-free, bean & legume-free
- 5-6 heirloom tomatoes, chopped
- 1/2 red onion chopped
- 2 cloves garlic, minced
- 1 jalape??o pepper, seeded and minced
- handful of cilantro, chopped
- juice from 1/2 lime
- salt and pepper to taste
Mix all ingredients in a large bowl. Refrigerate at least 30 minutes before serving. Enjoy!
I’m also bringing along some apples from the orchard (with peanut butter of course) and some Kashi TLC Pumpkin Flax crunchy granola bars (I love these bars!).
