Tonight I made a quick dinner of ravioli with pesto and mushrooms from a couple convenience items I had in the kitchen.
I tried a new product – Rising Moon Organics Vegan Mediterranean Garlic & Herb Ravioli. The raviolis come frozen and all you have to do it boil them, quite simple.
I sautéed some baby portabella mushrooms using Earth Balance butter spread.
After about 15 minutes of cooking, they went from thisÔÇª.
To this! I sautéed the perfectly just to the point where they get a little bit crispy.
I mixed the ravioli with some pesto and topped them with mushrooms. I found the ravioli to be a little too salty for my liking, but overall they had a good flavor which I enjoyed. I will definitely be taking leftovers for lunch tomorrow and would be interested in trying more Rising Moon Organics products in the future!
