Upon my search for great vegan chocolate chip cookies I found this recipe! These cookies were dangerously delicious; the dozen that I made were gone in less than 24 hours!

Ingredients:

  • 1/2 cup sugar
  • 1/2 cup dark chocolate chunks
  • 1/4 tsp sea salt
  • 1 1/4 tsp cinnamon
  • 3/4 tsp ground nutmeg
  • 1/16 tsp ground allspice
  • 1/16 tsp ground cloves
  • 1 cup all-purpose flour
  • 3 Tbsp cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/3 cup light maple syrup
  • 1/4 cup canola oil

Preheat oven to 350*F. Combine all ingredients except syrup and oil in a large boil. In separate bowl, mix oil and syrup together. Add the wet mixture to the dry and stir until moist (add a little extra oil and syrup to the mixture if it seems a little dry). Line a baking sheet with parchment paper for easy clean-up. Spoon rounded tablespoons of batter onto baking sheet. Bake for 11 minutes. Remove from oven and let cool for 1 minute. Transfer cookies to cooling rack and enjoy!

These ooey gooey chocolate cookies were such a hit and the recipe is so simple! Try them at your next party to share with family and friends; no one ever has to know they don’t contain butter, milk, or eggs! I will definitely be making this recipe again in the near future!

Both are variations of recipes from my latest bookstore purchase, Eat Drink and Be Vegan by Dreena Burton. These were the first two recipes I tried from her cookbook and I was not disappointed! These delicious vegetable phyllo rolls are infused with a delicious mixture Moroccan spices. This recipe took much longer then I had anticipated and I found the phyllo dough difficult to work with, but the final product was well worth it! The phyllo rolls made a perfect dinner paired with rice but they would also make great party appetizers. Ingredients: 1 yellow pepper, chopped 1 red pepper,...
