Karyn’s Cooked!

Finals week is finally over with so I went out with a couple friends to celebrate! We have been dying to go to Karyn’s all semester, so finally we got a chance to check it out! Karyn’s Cooked is a vegan restaurant here in Chicago; there is also Karyn’s Raw, a raw food restaurant as well. Sorry for the blurriness of some of these pictures, the mood lighting was not the greatest for taking photos.

002

We started off with some chips and guacamole served with raw veggies, pico de gallo, soy sour cream, and chipotle sauce.

004

I had the Buddha Bowl which was a mix of grilled vegetables in a teriyaki sauce over brown rice seasoned to perfection!

006

Jessica had the Grilled Polenta layered with wild porcini and shiitake mushrooms.

005

Her side of broccoli turned out to be ENORMOUS!

007

Catherine had a vegan homestyle meat loaf which was a delicious blend of veggies, rice, seitan, and seasonings topped with shiitake mushroom gravy served with a side of garlic mashed potatoes, garlic bread, and steamed broccoli. You would have never thought this was vegan by the looks of it! And the flavor was amazing! I can’t wait to find a similar recipe online to make at home for dinner!

008

Dessert was a raw chocolate mint bar. It was full of nuts and chocolate goodness; it reminded me of a Larabar with chocolate frosting!

009

And of course we shared a bottle of Organic Don Rodolfo Malbec because a celebration is not complete without a drink! I cannot wait to go back to Karyn’s! All of the food was absolutely to die for and the prices were totally reasonable. I would recommend Karyn’s to anyone looking to try something new and fun, you don’t have to be vegan to enjoy a fabulous vegan dinner!

Way to end the semester off strong ladies!

Tonight for dinner I made some basic pasta with tomato sauce. I topped the pasta with broccoli and a few leftover falafels to act as “meatballs”. As a side I baked green beans with sliced onions and minced garlic in olive oil (for a kick of vitamin E). Once they were done baking I mixed in some toasted pine nuts and pear infused balsalmic vinegar for extra flavor! It was quick and...

My favorite quick dinner when I’m in a time crunch is Annie’s Homegrown Totally Natural Organic Whole Wheat Shells & Extra Cheesy Cheddar Sauce. Annie’s macaroni and cheese is made with 100% cheese and no unidentifiable artificial ingredients. Adding broccoli to the dish makes it even more tasty! I use Zip N’ Steam bags to steam my broccoli in the microwave. Those...

Tonight was the perfect night for spaghetti squash! Having class all day I was too lazy too make anything elaborate for dinner so this was the perfect choice. Simple, quick, and delicious! I just kind of eye ball the ingredients, but here is the exact recipe: 1 medium raw spaghetti squash 1 tsp olive oil 1 small onion, chopped 1 garlic clove, minced 14 1/2 oz canned stewed tomatoes, cut up 1...
