With the weather cooling down here in Chicago, I can’t help but add pumpkin to everything! It’s my favorite fall ingredient! Last Sunday I made The Best Pumpkin Bread and today I made Pumpkin Cinnamon Rolls! Since I adore baking, I have decided to designate Sunday mornings to baking. I have a huge sweet tooth and this will be the perfect way to limit myself without feeling completely deprived. Not to mention it will give me something to plan and think about all week!
Now, on to the Pumpkin Cinnamon Rolls. Before today I have always just purchased the pre-made rolls of cinnamon rolls at the grocery store and popped them in the oven for a quick treat. But this morning I went all out – kneading the dough, rolling the cinnamon sugar goodness inside, and whisking together a sweet pumpkin flavored icing!
It was VERY involved and I can see why people choose the convenience versions instead. But it was really fun! I enjoyed the challenge and being able to know exactly what ingredients went into them was even more exciting!
I got this recipe from The Best of Cooking Light, but made a few minor changes based on the ingredients I had available in my kitchen. I substituted some of the all-purpose flour with whole wheat flour which I think contributed to the slight chewy texture of the roll in the end.
Nevertheless they were delicious, all of my hard work paid off!
