Quick Breakfast Strata

This weekend I have 6 friends coming into town! Six! I’m so busy cleaning and preparing everything for their arrival that I barely have time to blog! I’ve made some salsa and guacamole for friends to munch on when they get here as well as some oatmeal peanut butter cookies that are absolutely delish!

I prepared this breakfast strata which is in the refrigerator to pop in the oven tomorrow for breakfast; hopefully I can get to the kitchen without stepping on anyone in the morning!

At the UIC farmer’s market today I picked up some fresh tomatoes (which went into the salsa and guacamole) and some nectarines, which went into a fruit salad to go with my strata tomorrow! Hope everyone’s enjoying their Friday!

Quick Breakfast Strata

Ingredients:

  • 3 cups herb seasoned croutons
  • 8 oz sliced turkey sausage
  • 8 eggs
  • 1/2 cup 2% evaporated milk
  • 1 cup shredded cheddar cheese
  • 1/2 zucchini, diced
  • 1/4 onion, diced
  • 1/2 red pepper, diced
  • Salt and pepper to taste

Layer a casserole dish in this order: croutons, cooked turkey sausage, sauteed vegetables, cheese, and egg and milk mixture (previously whisked together). Let stand for 15 minutes or refrigerate overnight. Bake for 30-35 minutes at 350 degrees.
