Tomatoes and Lycopene

Sadly my fresh farmer’s market cherry tomatoes are gone! I used the last of them to make a pita pizza for lunch. These tomatoes were so delicious and I was able to reap their nutritioal benefits all week! Not only are tomatoes rich in vitamins and minerals, but they fight against cancer!

Tomatoes and tomato products contain lycopene which is a phytochemical that causes their characteristic red pigment. Lycopene acts as an antioxidant in the body and protects against cancer (specifically esophageal, prostate, and stomach cancers) by inhibiting the growth of cancer cells. What better reason to incorporate tomatoes into your diet than that?!
