UIC has a new farmer’s market this year on campus for students! I couldn’t wait to get over there and check out what they had. While there were only a handful of vendors, I still came away with some great purchases!

I bought some cherry tomatoes

and nectarines.

For dinner I wanted to use the fresh tomatoes for a fresh margherita pizza. I made my first ever homemade pizza dough. Instead of using all white flour, I substituted half of the flour for whole wheat flour for a healthier dough. It turned out wonderfully and was much simpler than I thought it would be!

The pizza was topped with fresh and simple ingredients:
- Cherry tomatoes, sliced
- Basil leaves, chiffonade
- Mozzarella cheese, sliced
- Garlic, minced
- Olive oil

After about 30 minutes in a 500 degree oven it was finished. This pizza was such a hit that it was almost completely gone before I even got the chance to photograph it!
