The Best Vegetarian Cookbooks

In an effort to cook more when school starts back up I decided to get myself a couple new cookbooks!

I choose these 2 vegatarian cookbooks, How to Cook Everything Vegetarian and The New Moosewood Cookbook, not only because of their grand popularity, but also because they include some really simply and quick recipes that are perfect for anyone with a particularly busy schedule. I plan to post reviews (and of course pictures!) as I cook my way through these cookbooks during the school year!

What is your favorite go-to cookbook for easy and delicious recipes?
